Fluffy Coconut Cake Batter Pancakes

Ingredients:

1/3 cup of oats ground into oat flour

1 Tbsp of coconut flour

2 Tbsp of cottage cheese

8 Tbsp of Egg whites

1/2 tsp baking powder

1/2 tsp of vanilla

1/4 tsp butter extract

1/4 tsp coconut extract

cinnamon

stevia packet

1/2 Tbsp of psyllium husk (optional but adds fluffiness)

 

Directions:

Add all ingredients together in a blender (I use a Nija) and mix well! Let the batter sit for a few minutes then use to make pancakes or waffles!! I top mine with walden farms chocolate sauce, Peanut butter, raspberries and banana. But, you make use whatever you would like!!

Triple Chocolate PB&J Protein waffles!

Ingredients:

2 TBSP Coconut Flour

1/2 Scoop of Chocolate Velvet Designer whey

8 Tbsp egg whites

2 tbsp cottage cheese

1/2 tsp baking powder

1/2 tbsp Psyllium husk (optional)

stevia packet

vanilla extract

butter extract 

Directions: 

Mix all the ingredients together in a blender( I used a ninja). Spray waffle maker and pour in batter. Be careful not to overflow your waffle maker! This recipe made 1 and 3/4 waffles for me! Once done cooking top with dark chocolate dreams Peanut Butter, Walden Farms chocolate sauce, banana, vanilla creme sauce, and strawberry “jam” (frozen microwaved strawberries).

Overnight cookie dough oats!!

Ingredients:

1/2 cup of oats/ oat bran combine

1 and 1/3 cup of water then another 1/2

1/2 small zucchini

vanilla extract

butter extract

Sugar Free vanilla syrup

6 TBSP of egg whites

stevia packet cinnamon

Directions: Microwave in a BIG microwave bowl oat/oat bran mixture, water.stevia, zucchini, syrup, and extracts for about 4 minutes or till thick (watch for overflow). Then add egg whites and microwave for another 3 minutes or until really thick! Take out and add another 1/2 cup of water and cinnamon. Place the whole mixture in fridge and in the morning top with whatever your heart desires. I heat mine up foe about 1:30 but you can eat them cold it you want! I topped mine with white chocolate dreams peanut butter, walden farms chocolate sauce, banana, and blueberries!

Healthy “Pop-tart”

HEALTHY POP-TART! 

 

Ingredients:

1 small la tortilla factory tortilla

1/2-1 scoop of protein powder

2 tbsp cottage cheese

1/2 tbsp coconut flour

1 tsp vanilla extract 

Directions:

Mix all the ingredients and place inside the tortilla. Then fold tortilla and place inside a George Forman grill for about 4 minutes or untill toasted! Top with whatever you would like!! 

Fluffy Zucchini Protein Pancakes!

1/5 zucchini shredded

8 tbsp egg whites

1 Tbsp Cottage Cheese

cinnamon and pumpkin pie spice

Vanilla extract

Butter Extract

Stevia packet

Directions: Mix all ingredients in a blender ( I use a ninja). Heat a skillet to medium heat and spray with coconut oil. Place pancakes batter on skillet and cook till done! Enjoy, and top with what every our heart desires! I top min with peanut butter, bananas, my healthy chocolate sauce, and my vanilla creme sauce (Greek yogurt, WF marshmallow fluff, and sugar free vanilla syrup mixed together)!

Reese’s pumpkin protein zucchini Waffles!!

Recipe: 

2 tbsp coconut flour

1/2 scoop of designer whey white chocolate protein

1/2 tbsp psyllium husk ( optional)

1/2 tsp baking powder

Carmel extract

1 tsp vanilla extract

1/2 small zucchini shredded

1 tbsp cottage cheese

8 tbsp of liquid egg whites

2 tbsp canned pumpkin

cinnamon

pumpkin pie spices

stevia packet ( optional)

Directions: 

Mix all of it up in a blender ( I use a ninja). Follow directions on waffle maker and cook! Coat with coconut oil so it does not stick!! This recipe makes 1 and a quarter waffle so don’t over flow your waffle maker!! Top with whatever your heart desires!!

Egg white Zoats!!

I finally hopped on the Zoats train!! Here is the basic recipe!!

Ingredients

1/2 cup oats

1 cup of water

1/4 cup almond milk

1/2 tbsp chia seeds 

1 stevia packet

1/2 zucchini shredded

1 tsp vanilla

6 TBSP egg whites

Cinnamon

Microwave all the ingredients except the egg whites for 3min in the microwave (watch for overflow)then stir and add egg whites and cook for another 2 minutes! I top mine with almond butter, peanut butter, pb2,my healthy chocolate sauce, walden farms sauces, banana, blueberries. strawberries, raspberries, etc….the possibilities are endless! 

Variations:

Pumpkin: Add

2-3 TBSP of canned pumpkin 

Pumpkin pie spice

Red Velvet: Add

1 scoop of Cococardio (found on Iherb.com)

There will be more variations to come!!

Peanut Butter Cookie Dough Recipe!

I am literally obsessed with this stuff!! I put it on top of my proyo every night =] I am currently working on more flavors, but for now here is the PB recipe!!

-1 tbsp coconut flour

-1 tbsp of pb2

-1 tbsp unsweetened apple sauce

– vanilla extract

– stevia if desired

-2 tbsp of egg white protein powder-optional or maybe another protein powder will work!

The take a fork and mix it up till you get it to the consistency you want! You make want to add a tiny bit of almond milk depending ob the consistency you want. ENJOY!

New Recipe: Quinoa Chicken Fried Rice!

Directions:

Heat a skillet on medium….mean while…

1-Cut up tomatoes, green peppers, and spinach. ( you can add what ever veggies you want)

2-Cook a serving of Quinoa (1/4) ….follow the directions on the package.  I already had some made so I did not have this step. 

3-Cook chicken (I used 3.5oz) I made my chicken on my George Forman grill and topped it with Mrs. Dash.

4-Add the Quinoa, chicken, pepper, onion power (and other spices if wanted), nutritional yeast, liquid aminos, and veggies to the skillet…..let cook for about 3 min.

5-Add egg whites (I used 1/3 cup) or and egg to the skillet….cook till eggs are cooked!

6-Put in a bowl and ENJOY! I topped mine with Guac cause I love it!!

New recipe: Mixed Berry Coconut Protein Pancakes!!

I used this Fluffy Protein Pancakes base then added

-2 more TBSP of egg whites (More protein!)

-coconut extract

-1/3 cup blueberries and raspberries! 

Then I topped them with my:

-healthy chocolate sauce

-vanilla cream sauce (recipe at the bottom of the page)

-Stuffed with cut up banana slices!!
