Oat Bran double chocolate Reese’s Pancakes

Ingredients:

1/4 cup oat bran

2 Tbsp Coconut flour

7 Tbsp egg whites

1 tbsp cottage cheese

1/2 tbsp coco powder

1/2 tsp baking powder

1/2 tsp vanilla

1/4 tsp butter extract

1/2 tbsp psyllium husk (optional)

4 Tbsp almond milk

Directions:

Add all ingredients together in a blender (I use a Nija) and mix well! Let the batter sit for a few minutes then use to make pancakes or waffles!! I top mine with walden farms chocolate sauce, Peanut butter, vanilla creme sauce, and banana. But, you make use whatever you would like!!

Vanilla creme sauce:

3 TBSP Plain greek yogurt

stevia

vanilla extract

Reese’s pumpkin protein zucchini Waffles!!

Recipe: 

2 tbsp coconut flour

1/2 scoop of designer whey white chocolate protein

1/2 tbsp psyllium husk ( optional)

1/2 tsp baking powder

Carmel extract

1 tsp vanilla extract

1/2 small zucchini shredded

1 tbsp cottage cheese

8 tbsp of liquid egg whites

2 tbsp canned pumpkin

cinnamon

pumpkin pie spices

stevia packet ( optional)

Directions: 

Mix all of it up in a blender ( I use a ninja). Follow directions on waffle maker and cook! Coat with coconut oil so it does not stick!! This recipe makes 1 and a quarter waffle so don’t over flow your waffle maker!! Top with whatever your heart desires!!

Red Velvet Protein Zuccini Waffles!!

Ingredients:

2 Tbsp Coconut Flour

1/2 scoop Protein

1/2 Psylium Husk (Optional)

1 tsp vanilla extract

8 Tbsp of egg whites

1 TSBP Cottage Cheese

1/2 tsp baking powder

1/2 Zucchini Shredded

Cinnamon

Directions:

Put all ingredients in a blender and mix well. Poor in waffle maker and cook till done!! ***This batter made 1 and 1/4 waffles for me so make sure you do not overflow your waffles maker.

Top with whatever you!! I make my own vanilla marshmallow creme sauce( 2 tbsp greek yogurt, walden farms marshmallow fluff, SF vanilla syrup), healthy chocolate sauce, banana, strawberries, walden farms syrups, etc….

Egg white Zoats!!

I finally hopped on the Zoats train!! Here is the basic recipe!!

Ingredients

1/2 cup oats

1 cup of water

1/4 cup almond milk

1/2 tbsp chia seeds 

1 stevia packet

1/2 zucchini shredded

1 tsp vanilla

6 TBSP egg whites

Cinnamon

Microwave all the ingredients except the egg whites for 3min in the microwave (watch for overflow)then stir and add egg whites and cook for another 2 minutes! I top mine with almond butter, peanut butter, pb2,my healthy chocolate sauce, walden farms sauces, banana, blueberries. strawberries, raspberries, etc….the possibilities are endless! 

Variations:

Pumpkin: Add

2-3 TBSP of canned pumpkin 

Pumpkin pie spice

Red Velvet: Add

1 scoop of Cococardio (found on Iherb.com)

There will be more variations to come!!

New recipe: Caramel Pumpkin blueberry pancakes with caramel cream sauce!

Recipe:

I used my same recipe as my pumpkin pancakes but I added fresh blueberries and carmel extract to the batter! Then I topped them with my healthy chocolate sauce , banana, and caramel cream sauce!

Carmel cream sauce:

2 TBSP plain greek yogurt

Stevia

Carmel extract

New recipe: Pumpkinoodle egg white oats!!

Pumpkin + snicker doodle= Pumpkinoodle!! 

Recipe:

1/2 cup oats

1/2 cup almond milk

1/2 cup water

1/2 TBSP chia seeds

Vanilla extract

Caramel extract

Cinnamon

3 TBSP Pumpkin

Directions: 

Cook the oats, almond milk, water, chia seeds, extract, and cinnamon for 2 minutes then add the egg whites and microwave for another 2 minutes. Take out and add the pumpkin and microwave for 30 seconds. Top with whatever toppings you desire. I use fruit, banana, and pb2!! Such a great combo!! 

 

New recipe: Pumpkin Pancakes!

Pumpkin Pancakes:

Inspired by Crystal 

Ingredients:

Dry-

3 TBSP Coconut flour

1 tsp chia seeds

1/2 tsp baking powder

1/2 tbsp psyllium husk

1/2 scoop protein powder ( I used white chocolate designer whey)

cinnamon

stevia

Wet-

1/4 cup canned pumpkin

1/4 cup egg whites

2 tbsp almond milk**

1/8 cup of water**

1/2 tsp vanilla

**The amount of liquid depends on protein powder used. So just eye ball it till it gets to a good thickness for pancakes.

***If you want to make spinach pancakes cup up spinach in a food processor and add to mix.

Directions:

First heat a skillet to medium heat. Then mix dry ingredients then add wet. Mix well and let sit for at least 5-10 minutes. Make pancakes into whatever size you desire. These took a bit longer to cook than other pancakes I have made because they are thicker. So, eyeball it and just cook till they are done! Top with what ever your heat desires! I topped mine with my healthy chocolate sauce (recipe in recipe tab), blueberries, banana, and some walden farms syrup!
