Roasted Sweet Potato Rounds

Set oven to 400 emojiPlace whole potato in over or microwave it so that it is easier to cut. Once potato is at a good cutting firmness cut potato into rounds. emojiSpray a baking sheet with olive oil and place potatoes on sheet. emojiSpray potatoes again with a little bit of olive oil and add pepper and onion powder. emoji Place in oven for 12 min then flip and cook another 12. emojiIf they are not browned enough to your liking broil them for about 5 minutes! emoji

Healthy Pizza and Easy tomato sauce!

Ingredients:

-1 flatout or you could use a tortilla

-My healthy easy tomato sauce (recipe below)

-A protein (I used chicken but you may use what ever you like)

-Spinach

-cottage cheese

-Swiss cheese

-Sun dried tomatoes

Tomato sauce:

-3 TBSP of plain tomato sauce from can

-Basil, peper, onion powder, garlic power, nutritional yeast, thyme

Mix all together and put on pizza! See its so easy!

Directions:

Pre heat oven to 400. Place flatout on a pizza pan and put in oven for 5 minutes. Take it out and add toppings. Then put the whole thing back in the oven for another 5-7 minutes. Take out and enjoy!!

New Recipe: Quinoa Chicken Fried Rice!

Directions:

Heat a skillet on medium….mean while…

1-Cut up tomatoes, green peppers, and spinach. ( you can add what ever veggies you want)

2-Cook a serving of Quinoa (1/4) ….follow the directions on the package.  I already had some made so I did not have this step. 

3-Cook chicken (I used 3.5oz) I made my chicken on my George Forman grill and topped it with Mrs. Dash.

4-Add the Quinoa, chicken, pepper, onion power (and other spices if wanted), nutritional yeast, liquid aminos, and veggies to the skillet…..let cook for about 3 min.

5-Add egg whites (I used 1/3 cup) or and egg to the skillet….cook till eggs are cooked!

6-Put in a bowl and ENJOY! I topped mine with Guac cause I love it!!

Recipe: Healthified Pizza

If you guys follow me on IG you have seen these healthified tortilla pizzas a lot! I am literally addicted to them! They are very versatile and you can make them into what ever it is you are craving….wether it be mexican or italian, ect….you can add whatever toppings your heart desires! 

Recipe (Italian Version):

1 whole wheat tortilla

Healthy tomato sauce

Spinach (enough to cover tortilla)

Cottage cheese 

4oz of chicken or ground turkey 

sun dried tomatoes

avocado 

Healthy sauce:

2 TBSP tomato sauce

Add seasonings: pepper, basil, rosemary, garlic power 

THATS IT EASY AS THAT

Directions:

Make healthy sauce and spread on tortilla. Then put the spinach on. Then add the meat, cottage cheese, avocado, and sun dried tomatoes. Bake in oven for about 16 minutes turning the tray halfway through!

Recipe: Turkey Burgers

Directions:

MIx in a bowl:

4oz Ground turkey

1 cup of spinach chopped up (I use my food processor) 

1 laughing cow cheese wedge

a few sundries tomatoes

random spices (garlic powder, pepper, onion powder, cayenne pepper, etc) 

Then cook on a George Forman Grill for about 6 minutes on high heat! ( you could easily make them in the oven or on a skillet too)

ENJOY! 

Update time!!

Hello Loves!

I am officially done with my first year of college! I am on cloud nine right now! This year has been an emotional roller coaster for me. It was by far the hardest year of my life! I am so excited to be out of school so that I can focus on my blog. I hope to become a better blogger and be consistent! I want to participate in the all MMMs and WIAWs!

 This summer I will be going to Iowa to get my brother from college and then from there we are taking a family vacation to Florida! I can not wait for the sunshine, runs on the beach, and tanning time! Then I plan on coming back to my home town and working as a camp counselor at a summer camp for kids! I love kids so I hope I get the job…I find out monday! I am planing on camping and hiking a ton in the beautiful mountains I live during my free time. I am also going to try and make some yummy recipes to share on m blog. Of course I will be running and weight lifting throughout the whole summer. I plan on running in multiple races! 

Since being home I have taken full advantage of my kitchen! Oh how I have missed it! 

I made a Sweet Coconana Omelette for the first time and man was it good!

I also made protein coconut flour waffles for the first time! I do not remember the last time I have had waffles! I have had them two days in a row and probably will have them tomorrow! No Shame!

 I also made my favorite dinner bowl which consisted of roasted sweet potatoes, Brussels sprouts, and chicken! Toped with liquid amines and a tangy mustard sauce!

I am so thankful to be home. I am with my wonderful parents and kitties! I also have my wonderful Rec Center to go to. When I went yesterday for the first time since being back I was so excited to see they had gotten a stair machine! I was ecstatic to say the least! I did a new leg workout yesterday inspired by the lovely Katie from Skinny Minnie Moves. I am so  sore today I love it! I also did 20 minutes on the stair stepper after my workout….I was a sweaty mess. That machine is a killer. It is probably my new favorite cardio machine at the gym!

Well, I hope everyones weeks have gone well. Tomorrow is friday so keep trucking along you are almost to the weekend!
