Recipe: Coconut Flour Chocolate Strawberry pancakes

Recipe: Heat a skillet at medium heat and spray. Then mix dry ingredients together. Then add wet to dry ingredients. You can either choose to make a bunch of mini pancakes like the picture. Or make a few medium sized! Top with the chocolate sauce and microwave frozen strawberries (do not dump out the juice pour it on the pancakes)! 

Dry:

3 TBSP of coconut flour

Cinnamon

1/4 tsp baking powder

sweetener if desired ( I used a little trivia)

Wet:

9 Tbsp of egg whites

vanilla extract

1/4 cup or liquid (water or unsweetened almond milk)

1 Tbsp of greek yogurt

Chocolate sauce: I did not measure then amounts just taste the mixture till it is to your liking! 

unsweetened Coco powder

Truvia (or any sweetener)

water or almond milk

  1. I just did a post about coconut flour this week! Isn’t it great? I love the subtle sweet flavour, moisture and the fact that it’s just so darn packed with protein and fibre 🙂 Thanks for this pancake recipe!
