New Overnight Oats recipe!!

Hello loves! 

I have started my summer job as a camp counselor at my local rec center! I am working with my best friend and my twin brother so I am very excited! The camp starts at 8am and goest ill 5:30pm! That means I have to have my food prepared and ready to go. In the mornings I have been making a new overnight oats recipe! I LOVE my oats thick and this recipe was perfect! The oats were nice a thick and gooey =]


Topped with Raspberries and healthy chocolate sauce!


Topped with Raspberries and walden farms caramel syrup!


RECIPE (adapted from Kristen):

Put all ingredients in a bowl:

1/3 cup of oats

1/2 cup plain Fage 0% greek yogurt

1/2 cup unsweetened vanilla almond milk 

1/2 TBSP chia seeds

Vanilla extract


Put in the refrigerator overnight then in the morning top with whatever your little heart desires!

Hello lovies! A while back I was nominated for the Liebster Award by the lovely and amazing Brittany! I was so busy with college classes and exams that I did not have time to do it. 11 Random Facts:

1. I absolutely LOVE the Harry Potter series. I have never read the books. I just watch the movies!

2. Call me crazy but I love the movie The Hangover. I am excited to see the 3rd one!

3. I hope someday to own a Golden Retriever. 

4. I am despise math. The good news is I do not have to take another math class in my life!

5. I full heartedly believe that everything happens for a reason. 

6. I still watch cartoons on saturday mornings. 

7. I wish I could go to Neverland and never grow up. I love being young and having a whole life ahead of me to accomplish many things. I also feel as though I am just not ready to grow up yet.

8. I have already started planning my wedding. I am so excited to fall in love and have a beautiful wedding. I watch so many wedding shows on TLC!

9. I love watching HGTV with my mom! 

10. Like Brittany, I am a very indecisive person. I see it as a flaw, and I wish I could just set my mind to something and go with it!

11. I despise cold and snow. The only time it is acceptable is at Christmas time! I love a white christmas! It is my favorite holiday. I love the happiness and joy that fills the air. 

Brittany’s Questions for me:

  1. Who is your hero or role model?

I would have to say my mommy is my role model. She knows how to stay calm when things do not go right. There are times when she is so busy ,but she manages her time very well and always gets everything done. She always puts other people before her self and makes sure everyone is happy. I hope that when I am a mommy I will be just like her. She has supported me throughout my whole life and given me a great life growing up. She is a very strong women. Love you mom.

2. What’s your favorite meal of the day? What’s your favorite thing to make?

Easy. Breakfast is by far the best meal of the day! I love waking up and knowing that I will be having something yummy in my tummy very soon. I used to be obsessed with oatmeal and I would have oats every morning. I love how many different flavor combinations you can make with oatmeal! I have now started to make coconut flour pancakes and waffles!

3. Would you consider yourself a shop-a-holic?

Unfortunately, yes I would call my self a shop-a-holic. But only at certain stores. I do not have issues with online shopping. But, if I go into Target, Kohls, or any other clothing store I usually end up making a purchase that I was not planning on making. The good news is most of the time it was something from the sale or clearance rack!

4. What’s your biggest pet peeve?

I despise when people pick there teeth and I can hear it. Both my parents will do it even though they know I hate it!

5. Do you enjoy reading? If so, what’s your favorite book?

I do enjoy reading! I have not been able to read a personal free book since in college, but I am excited to read this summer. I love any book by Nicolas Sparks. I also was a big fan of the Hunger Games series.

6. Are you a morning person or a night owl?

I am a morning person! I used to be a night owl, but i decided I like going to bed a decent hour and waking up early so I have the whole day ahead of me! I do not understand how people can sleep in till 10 or 11….half the day is already almost gone!

7. Do you have any “guilty pleasures?”

I love having Skinny Cow Ice Cream bars!! I also love having a few pretzel M&Ms!

8. What’s your most memorable experience?

There are so many memorable experiences in my life happy, sad, etc…I will chose a happy one! The day I graduated high school! Being able to throw my cap up in the air was the most amazing feeling ever!

9. Do you have a dream job? 

I want to own a gym and be a fitness instructor!!

10. What’s your favorite movie?

I love the Notebook or the Titanic!

11. Do you like animals? If so, what’s your favorite? 

I LOVE animals! I am a cat lady ( I have two)! But, I also love dogs as well. I love going to the Zoo and seeing all the different animals. I love all of them!

Recipe: Butterscotch Raspberry Egg White Caramel Oats!




**I made these in the microwave but you can easily make them on the stove top!

In a bowl add:

1/3 cup oats

1 cup of liquid (I mix water and unsweetened vanilla almond milk)

1tsp chia seeds

Butterscotch extract

sweetener if desired

-Microwave for 4 min (watch it to make sure it does not over flow)


6Tbsp of egg whites

1/4 tsp baking powder

-Microwave for 2 minutes

Then, take some frozen raspberries and microwave till hot. Pour over oats (Use the juice too). Add cinnamon!

Then top with Greek yogurt topping(2 tbsp of plain greek yogurt mixed with carmel extract and a little sweetener).Then add walden farms Carmel syrup! NOM NOM!  

Recipe: PB&J Egg White Oats

**I used the microwvae but you could easily make these on the stove top also!

In a bowl add:

1/2 cup oats

1 cup of liquid (I mix water and unsweetened vanilla almond milk)

1tsp chia seeds

Vanilla extract

sweetener if desired

I am back! A recap of my FL Vacation

I have been looking forward to going to Florida all year long! My mom planned this trip for my family and I to go on after my twin brother and I were done with our first year of college. I was in serious need to some relaxation, tanning, and hot weather. I spent most of my year in Boulder, Co at University of Colorado and it was an awful winter. I am not a fan of cold or snow at all. I actually think I get a little seasonal depression in the winter time. I am a summer girl at heart. Anyways, I will share with you a few of the fun things I did while in Florida! 

 Universal Studios in Orlando! 

Harry Potter world: You must put this place on your bucket list guys! It was so cool! The main ride inside the castle blew my mind!

Food Prep for the day!


We also went on the Hulk (a huge amazing roller coaster), the roller coaster in Harry Potter world ( I got stuck on it for 10 minutes…yikes!), The Despicable me ride, the Mummy ride, a water ride, and I also got a Henna tattoo. I wanted to ride the new transformers ride but it does not open till June 20th…but I was able to get a picture with Bumblebee! Word to the wise: Do not wear flip flops! My feet were killing me. Sandals would be the best! Also I was able to bring my own food into the park! I packed a nice healthy lunch and brought fresh veggies, fruits, and of course a quest bar. It surprised me that they sold fresh fruit at there snack stands! I was one tired but happy girl after this day!


Beach Time!

I live for the beach. I absolutely love the beach. I was able to run on the beach almost every morning. I would run then go eat breakfast then go tan the rest of the day! Beach running was harder than I though it would be! We also went to the beach for almost every sunset!

The Tampa Zoo

I love animals so I was so excited to go to the Zoo. Unfortunately, it was a very hot day so a lot of the animals were hiding under shaded ares so I could not see them very well. But it was still a good time! 


I love Penguins! Happy Feet is one of my favorite movies =]

Tarpon Springs

Tarpon Springs is a little greek town on the water. It is like a China town but Greek. They are famous for having have old fashioned sponge divers and boat tours. There were tons of little shops to explore. We also went to a Greek restaurant and I got a yummy chicken dinner (a challenge for me)!

Well thats about all the excitement I have to share with you guys. It was a much needed trip ,but I was also eager to get home and spend time with my friends! I also really missed my mountains and kitties! Being in other places I realize how blessed I am to live in the place I do. I need to not take that for granted! I went on a beautiful hike the day after I got back!

Recipe: Coconut Flour Chocolate Strawberry pancakes







Recipe: Heat a skillet at medium heat and spray. Then mix dry ingredients together. Then add wet to dry ingredients. You can either choose to make a bunch of mini pancakes like the picture. Or make a few medium sized! Top with the chocolate sauce and microwave frozen strawberries (do not dump out the juice pour it on the pancakes)! 


3 TBSP of coconut flour


1/4 tsp baking powder

sweetener if desired ( I used a little trivia)


9 Tbsp of egg whites

vanilla extract

1/4 cup or liquid (water or unsweetened almond milk)

1 Tbsp of greek yogurt

Chocolate sauce: I did not measure then amounts just taste the mixture till it is to your liking! 

unsweetened Coco powder

Truvia (or any sweetener)

water or almond milk

Facts about me Part 2- The Ugly


This is hard for me to share but I feel like it is something that I need to come out about on my blog. After all this blog is about my life and me. On Instagram I portray my life, but only the good parts and the parts I am okay with. I want people and girls to know that there is so much ore to me. My life is NOT perfect. There is no such thing as perfect. It may seem like I have this whole healthy life style thing down, but that is far from the truth.

I have fallen into a deep dark hole where I think I have to be prefect and everything about my life hast to be.  My relationship with food and exercise is not what I want to be or what it should be. It is not a healthy relationship. I know this for a fact. It is an obsession that has overcome my life. I plan my days around my eating and workout schedule. I feel like I no longer have a social life because I cannot go out to a restaurant and enjoy a meal. I find myself not even wanting a to eat a “cheat meal”. I have no desire to eat something that is not healthy for me. I would way rather eat a sweet potato, chicken, and veggies for dinner than a piece of cheesy pizza. If people ask me to go out it either has to be a restaurant I know I like and know the food is healthy. There is the option of just going and sitting with everyone but I feel like everyone is judging me for not eating. This was a big deal for me during my first year in college. All college kids do it seems is party and eat unhealthy. Neither, which I wish participate in. I did not find friends at CU Boulder because of this. I get upset about food. I have gotten better, but it is still bad. I eat the same things almost everyday. Now that I am home I am able to eat a more variety of foods though. I eat strictly by the clock even if I am starving. In the past few weeks I have gotten better and ate something if I am really hungry, but not all the time. I tend to restrict and save up my calories. During the day and am starving throughout the day. Then at night I get so hungry and eat the calories I saved, which is usually a lot and it makes me feel awful about myself. I know that I should probably be eating more with the amount of exercise I do but I am scared to. I know I should eat more healthy fats as well. I eat lunch or breakfast and am hungry in an hour or so, it is awful. I have a My Fitness Pal account that I use everyday. I am obsessed with calorie counting. I wish I would have never started. Even if I do choose to stop in the back of my head I will always know the calorie counts of so many foods. 


Now, onto my exercise obsession. I feel like I have to exercise everyday, and burn a certain amount of calories. My day is not complete until I workout. I feel like a failure if I do not. Rest days are basically off limits for me. The only way I will take a rest day is if I have no absolutely have no time to workout. This is never really an issue because I make sure I have time everyday.  The last rest day I took was yesterday because I was in the car the whole day on a road trip. I cannot tell you last rest day I had before that. This I am sure negatively affects my body. My sleep is awful. I cannot fall asleep very well and then I wake up most nights 3-4 times a night. Then wake up really early usually around 6:30. I am always starving when I wake up.  I will work out even if I feel like crap. This is not the way I should treat my body. I need to listen to it. 


There is a part of me that wants to get out of this and get professional help, but unfortunately there is a part of me that loves the control I have and I do not want to lose that. I talked to a counselor the 2nd semester at college and now this summer I am thinking about seeing a nutritionist and talking to a counselor that specializes in disordered eating. My mind is stuck in a black hole. I need to get out of it. There is no way  I can live like this for the rest of my life.

Update time!!

Hello Loves!

I am officially done with my first year of college! I am on cloud nine right now! This year has been an emotional roller coaster for me. It was by far the hardest year of my life! I am so excited to be out of school so that I can focus on my blog. I hope to become a better blogger and be consistent! I want to participate in the all MMMs and WIAWs!

 This summer I will be going to Iowa to get my brother from college and then from there we are taking a family vacation to Florida! I can not wait for the sunshine, runs on the beach, and tanning time! Then I plan on coming back to my home town and working as a camp counselor at a summer camp for kids! I love kids so I hope I get the job…I find out monday! I am planing on camping and hiking a ton in the beautiful mountains I live during my free time. I am also going to try and make some yummy recipes to share on m blog. Of course I will be running and weight lifting throughout the whole summer. I plan on running in multiple races! 

Since being home I have taken full advantage of my kitchen! Oh how I have missed it! 

I made a Sweet Coconana Omelette for the first time and man was it good! 



I also made protein coconut flour waffles for the first time! I do not remember the last time I have had waffles! I have had them two days in a row and probably will have them tomorrow! No Shame! 



 I also made my favorite dinner bowl which consisted of roasted sweet potatoes, Brussels sprouts, and chicken! Toped with liquid amines and a tangy mustard sauce! 


I am so thankful to be home. I am with my wonderful parents and kitties! I also have my wonderful Rec Center to go to. When I went yesterday for the first time since being back I was so excited to see they had gotten a stair machine! I was ecstatic to say the least! I did a new leg workout yesterday inspired by the lovely Katie from Skinny Minnie Moves. I am so  sore today I love it! I also did 20 minutes on the stair stepper after my workout….I was a sweaty mess. That machine is a killer. It is probably my new favorite cardio machine at the gym!

Well, I hope everyones weeks have gone well. Tomorrow is friday so keep trucking along you are almost to the weekend!

7 Things that you do not know about Hayls:

1) I have been taking finals and I still am taking finals. I have been studying for so long my brain is overwhelmed. I am so close to being home it hurts! I leave Tuesday night! I will be done with my first year of college! 

2) I currently can not sleep in. That is why I am able to do this post right now. I have time in the early morning hours to get things done. I actually do not mind waking up early…I get more hours in my day!  

3) I absolutely adore the grocery store Sprouts. I am so fortunate to have one right across the street from my dorm. I have lived off of them the past year. I do not eat the dorm food here. My microwave and fridge have be my kitchen! 

4) I am transferring colleges next year to either go to Colorado Mesa University or Simpson College in Iowa(my twin brother also goes here). At either school I will be studying exercise science and sports management! I will also try and run on the cross country/track teams! 

5. Since coming to college I have become obsessed with getting fit and living a healthy life style. I love weight lifting, running, and eating healthy! 

6. Ever since seeing the Sisterhood Of The Traveling Pants I have always wanted to to go Greece!! 

7. I want to be able to run a Marathon someday! I have a long way to go but I am going to do it! I have started to look at training plans for a half!
