Story Time Saturday

     Once upon a time there was this girl. And this girl felt the pressure to be perfect. She wanted the perfect body, the perfect life, the perfect diet, the perfect everything. When things did not go as planned she would become very upset. Sometimes she would take it out on herself by not eating enough. Sometimes she would take it out on her body and do endless cardio. She would take it out on her family who cared for her so much. It was an endless cycle of madness.
Where did there need to be perfect come from? Her friend ED. Now ED, he thought was a powerful man. He could control this girls every thought and move. She could not longer think or act for herself. It was all about ED. He had taken so much away from her life. She no longer had a social life, her relationship with her family was awful, her friends were nonexistent, but most of all she had lost her own self in ED. But, one day this girl decided that enough was enough. Something inside her struck her. She did NOT want to live like this anymore. ED was no longer going to be her ruler. ED you see was an abusive boyfriend. The girl and ED were in an abusive relationship. It was so hard for her to finally get the courage and the guts to leave ED.
  Now of course leaving ED is not as simple as that. ED was always in the girls mind telling her things like, “Do not eat that you will get fat” or “Look at yourself, you are getting to fat”. These were normal everyday thoughts that ED would supply. Before the girl would listen to and follow his rules. But, now that was not always the case. The horrible thoughts that ED would send the girl’s way were combated. The girl now had the power to challenge the thoughts from ED. She now could use her own rational thoughts to fight him back! Everything that ED every said was a lie and always would be. The girl finally figured this out.
   So now as the days go on there are still awful thoughts from ED being sent my way, but I am much more powerful against ED. It is so hard to let go of the one relationship I had for over two years. Ed was the only man I had in my life. He was my only “friend”, or so I thought. I did not have time for anyone else in my life except ED. There are still days were it is a struggle and ED is louder than ever and I feel weaker than ever. But, you know I always do no matter what? I fight. I stay strong. I stick up for myself. I tell ED to shut up. ED is getting weaker and weaker as time goes by. I hope that someday ED’s voice will be a voice I hear no more. But, until then I know what I have to do for myself. I have a whole life ahead of me that can be filled with love, happiness, joy, and laughter. And I am willing to fight for that. We all deserve to be happy. Some of us just have to fight harder than other to reach that happiness. It was my choice to fight ED and it is your choice too. Fight for yourself and what you deserve. At time it feels unreachable, but believe me if you set your mind to it you can. Recovery is possible. I am on my journey towards that. I believe I can do it, and that you can too.

Post workout Overnight Oats!

Hello!!

So lately I have been going to the gym quite early in the morning. I prepare my oats the night before so that I have them all ready for when I come back to my dorm before class!!

Ingredients:

1/2 cup of oats

1.25 cups of water

Then 3/4 cup of water (added at the end)

1/2 cup grated zucchini

1 packet of stevia

1 tsp vanilla extract

4 TBSP egg whites

1/2 scoop of protein powder

 

Directions:

I microwave combine oats, stevia, water (not the 3/4 cup), vanilla extract, and zucchini (this is the step where you would add in other flavor extracts). Microwave in a big microwave safe bowl foe about 3-4 minutes (watch for over flow). I usually start with 30 second intervals. Then stir in egg whites and cook for another 2 minutes. Once done I add in the protein powder( I would also add in unsweetened coco power or cinnamon here if the flavor I was making needed it)! Then add 3/4 cup of water so that the oats can soak overnight!! Put in fridge and take out in the morning. I usually warm my oats up in the morning for 1 minute. Then top with what ever you would like! I love peanut butter or almond butter, banana, a fruit (raspberries, strawberries, or blueberries), walden farms chocolate syrup, and then my vanilla (or chocolate) cream marshmallow frosting!

Fluffy Coconut Cake Batter Pancakes

Ingredients:

1/3 cup of oats ground into oat flour

1 Tbsp of coconut flour

2 Tbsp of cottage cheese

8 Tbsp of Egg whites

1/2 tsp baking powder

1/2 tsp of vanilla

1/4 tsp butter extract

1/4 tsp coconut extract

cinnamon

stevia packet

1/2 Tbsp of psyllium husk (optional but adds fluffiness)

 

Directions:

Add all ingredients together in a blender (I use a Nija) and mix well! Let the batter sit for a few minutes then use to make pancakes or waffles!! I top mine with walden farms chocolate sauce, Peanut butter, raspberries and banana. But, you make use whatever you would like!!

Cocogo-“Real Fruit Hydration”

I was given the awesome opportunity of being able to try Cocogo, and man am I happy I did. It is a great way to get a boost of energy and electrolytes! The taste is also great! I saw the 3 flavors and at first I was like “ew” grape. I am not much of a grape flavor person. But, I decided to try it. And I was pleasantly surprised! It was the perfect tangy and sweet flavor that tingled my taste buds.

This would be a great drink to have on hand at anytime of the day. It would be great during or after a workout. Or even as a yummy, cold, refreshing drink on a hot relaxing day.

I had received the Cocogo right after a long day of classes and I was feeling very lethargic. I needed some energy before I went to go on an afternoon hike with a friend. I had the lemon-lime Cocogo and it was a great way to wake up and hydrate. I also took one of the convent packets with me to use on my hike! I am defiantly planning on continuing to use Cocogo! Snicker Doodle Cake Batter Protein Pancakes

Ingredients:

DRY-

1/2 scoop whey protein (I use designer whey white chocolate)

3 TBSP coconut flour

1/2 tbsp psyllium husk

cinnamon

1/2 tsp baking soda

Stevia Packet

WET-

7 TBSP egg whites

1 tbsp cottage cheese

3 tbsp almond milk

2 TBSP water (may need more)

vanilla extract

Butter Extract

Almond extract 

DIRECTIONS:

Mix the dry ingredients then add the wet ingredients. Let batter sit for at least 5 minutes. Then heat a skillet at medium heat and add batter (make the pancakes whatever size you want) Cook for 3 minutes or so (timing may be different so use your judgment) flip then cook for 4 minutes. Add toppings and enjoy!!!

I used my vanilla marshmallow frosting, walden farms chocolate syrup, banana, raspberries, and white chocolate wonderful peanut butter!!

Protein Zucchini Oat/ Oat bran base

This is the basic recipe I have been using recently with all my oats!! I always change up the flavors though usually.

Ingredients:

A spoon of  Walden farms Marshmallow fluff

a little stevia

a tiny big ( 1/8 tsp) of sugar free vanilla syrup

-MIX all together (you can also add unsweetened coco powder for chocolate)

Triple Chocolate PB&J Protein waffles!

Ingredients:

2 TBSP Coconut Flour

1/2 Scoop of Chocolate Velvet Designer whey

8 Tbsp egg whites

2 tbsp cottage cheese

1/2 tsp baking powder

1/2 tbsp Psyllium husk (optional)

stevia packet

vanilla extract

butter extract 

Directions: 

Mix all the ingredients together in a blender( I used a ninja). Spray waffle maker and pour in batter. Be careful not to overflow your waffle maker! This recipe made 1 and 3/4 waffles for me! Once done cooking top with dark chocolate dreams Peanut Butter, Walden Farms chocolate sauce, banana, vanilla creme sauce, and strawberry “jam” (frozen microwaved strawberries).

Overnight cookie dough oats!!

Ingredients:

1/2 cup of oats/ oat bran combine

1 and 1/3 cup of water then another 1/2

1/2 small zucchini

vanilla extract

butter extract

Sugar Free vanilla syrup

6 TBSP of egg whites

stevia packet cinnamon

Directions: Microwave in a BIG microwave bowl oat/oat bran mixture, water.stevia, zucchini, syrup, and extracts for about 4 minutes or till thick (watch for overflow). Then add egg whites and microwave for another 3 minutes or until really thick! Take out and add another 1/2 cup of water and cinnamon. Place the whole mixture in fridge and in the morning top with whatever your heart desires. I heat mine up foe about 1:30 but you can eat them cold it you want! I topped mine with white chocolate dreams peanut butter, walden farms chocolate sauce, banana, and blueberries!
